Ingredients
3 ripe bananas
¾ cup sweetened coconut
½ cup minced walnuts
1 cup sugar
5 tablespoons sour milk (or regular milk + a splash of vinegar)
1 teaspoon baking soda
½ cup shortening
1 egg
2 cups flour
1 bread pan
Preparation
Step 1
Preheat oven to 350°F (175°C).
Step 2
Mash the bananas in a bowl.
Step 3
In a separate bowl, cream together the sugar and shortening.
Step 4
Add mashed bananas, egg, and sour milk to the sugar mixture.
Step 5
Stir in the flour and baking soda.
Step 6
Fold in the walnuts.
Step 7
Pour batter into a greased bread pan
Step 8
Sprinkle coconut evenly on top and gently press for a smooth surface.
Step 9
Bake for 45 minutes or until a toothpick comes out clean
Step 10
Let cool before serving
